Custoza DOC Superiore

 

REGION

Custoza, Verona, Veneto.

GRAPES

Mainly from Garganega, Cortese and Trebbiano grapes grown in the Custoza area on hills of morainic origin with limestone, clay and gravelly soils.

VINIFICATION

Cold pre-fermentation maceration, soft pressing and fermentation at controlled temperature. This is followed by aging in steel on its own yeasts for about 4-5 months.

TASTING NOTES

Dry white wine. Intense straw yellow color with elegant golden reflections. Ethereal slightly aromatic bouquet with floral, exotic fruit and roasted almond notes. The nose presents great intensity and complexity. Fresh, sapid and mineral palate with excellent persistence and finesse.

ANALYSIS

Alcohol 13% Vol; Total acidity 6 g/l; Residual sugar 5,3 g/l.

FOOD PAIRINGS

Ideal as an aperitif, fish and shellfish dishes, soft cheeses and vegetarian dishes. Also excellent with white meats and Asian cuisine. Serve chilled at a temperature of 10°C.
