Characteristics of the Wine 

Valpolicella DOC Classico is a wine made from Corvina Veronese, Corvinone Veronese, and Rondinella grapes, cultivated with dedication in the hilly vineyards of the classic Valpolicella area, between Marano and Valgatara.  

These lands, rich in history and winemaking tradition, give the wine a unique and distinctive character. 

Valpolicella DOC Classico Campagnola embodies the soul of the territory, with its lively ruby color and fragrant aroma of fresh red fruits, enriched with delicate floral and spicy notes. Winemaking 

The grapes, carefully selected and handpicked from the best vineyards, after a light crushing, are left to macerate in contact with the skins, allowing the aromas and flavors to fully develop.  

Fermentation then takes place at a controlled temperature, a process that promotes optimal extraction of all aromatic and flavor elements.

Gastronomy 

Valpolicella DOC Classico Campagnola is an authentic gastronomic companion capable of enhancing a wide range of Italian dishes. Its freshness and liveliness make it perfect for accompanying a variety of light appetizers, such as meat or fish carpaccio, mixed salads, and bruschetta. 

This wine also pairs well with first courses such as spaghetti carbonara or mushroom risotto, thanks to its fruity and soft flavor that harmonizes with the sauces and main ingredients. 

Moreover, it can be enjoyed on its own, perhaps as an aperitif, with snacks such as olives, cold cuts, and fresh or aged cheeses. 

For an optimal tasting experience, it is recommended to serve Valpolicella DOC Classico slightly chilled, at a temperature of about 16-18°C, to fully appreciate its aromatic complexity and freshness. 

Valpolicella DOC Classico Le Bine 

Cantina Campagnola is proud to present one of its most exclusive labels: Valpolicella DOC Classico Le Bine. 

This wine is the result of a careful selection of the best Corvina, Corvinone, and Rondinella grapes from the oldest and most renowned vineyards in the valley. The vineyards are located between Valgatara and Marano, at an altitude of 250 meters, in the sunny hills of the Classic area of Valpolicella, giving the wine a distinctive and unique character. 

The winemaking process is artisanal, with manual harvesting of ripe grapes, gentle pressing, and maceration on the skins. Subsequently, a small amount of dried grape must is added to the Valpolicella wine in October to give it greater concentration and jammy aromas. 

The wine matures in large Slavonian oak barrels for 4 months and then continues to refine in the bottle, allowing the wine to develop its full complexity and harmony. 

Valpolicella DOC Classico Le Bine presents itself with an intense ruby red color and a distinctive and spicy bouquet. In the mouth, it reveals a dry, velvety, and soft taste, full-bodied, with a final hint of cherry and plum. It also retains a pleasant freshness and acidity that enhance its complexity and elegance, confirming its reputation for oenological excellence.
